The exact contents of the brine are a well kept secret. When they are only one day old the cheese wheels are placed in this specially created brine bath. It is in this bath where the rounds of cheese release liquid, absorb salt and form Appenzeller’s tasty rind. During the curing process the rounds are also washed with this mystery brine. It is said the brine is created from a mixture of over 25 different herbs! The exact mixture we will never know!
