Appenzeller Cheese Rösti
~Adapted from several classic rösti recipes!
This spicy potato dish can be served as a main or appetizer!
Serves 4 People
Ingredients:
• 250 g of Appenzeller Classic, shaved or grated using the large holes on your grater
• 3 large un-peeled baking potatoes
• 2 large carrots
• 3 Tbsp butter
• 2 Tbsp chopped parsley, chopped
• 2 Tbsp rosemary, finely chopped
• ½ Tsp ground pepper
• ¼ Tsp cayenne pepper
Preparation and Cooking:
Boil the unpeeled potatoes until semi soft
Peel while they are still warm
Once cool grate the potatoes with large holes on your grater
Grate the carrots and add to the mixture
Stir in the cheese (save a little for final topping), chopped parsley and
Heat the butter in a frying pan, add the rösti mixture (make a large Pattie) and
DO NOT STIR
Turn the rösti over and cook for another 10 minutes (approx.)
To finish, place the remaining cheese on top and let melt.
Serve and enjoy!
Tip
For hors d’oeuvre snacks, shape the rösti into small cakes and fry.
Remember do not stir the rösti as this will prevent a crust from forming.
Like to experiment? Add finely chopped lean bacon, sliced onions, or other cheese for other interesting variations.
Pairing:
With wine your best choices are usually whites wines like German Riesling or White Rhones. If you prefer a nice red then try a Dolcetto or your favourite Rhone Red.
