What is Lightly Pressed Cheese?
Ever wonder why the texture of your cheese can vary? It most likely has to do with the way the cheese is made! The curds of a lightly pressed cheese are pressed and are uncooked, as opposed to the pressed cheese group in which the curd is cooked, then pressed.
Your traditional and ever-so-popular Cheddar fits into the lightly pressed category. My personal favourite for those who are interested is the 5 year variety! Next time you pick up a piece of Cheddar also pick up a piece of Emmental or Gruyere and compare the aroma and texture of the uncooked curds to the curds that have been cooked.
