Fresh Figs Stuffed With Blue D’Auvergne Cheese, Walnut and Prosciutto
Ingredients:
• 4 large fresh figs
• 2 tsp finely chopped fresh thyme leaves
• 120 grams Blue D’Auvergne cheese
• 2 tbsp coarsely chopped toasted walnuts
• 4 pre-rolled strips of pre-bought puff pastry
• 2- 4 slices if prosciutto cut to fit on puff pastry slices (available at the shop)
• 1 large egg
• 1 tbsp water
Preparation and cooking:
Preheat oven to 400ºF
Mix together thyme, Blue D’Auvergne and walnuts
Criss-cross 1 inch deep cuts into each fig.
Press sides open like as flower
Stuff figs with the blue and walnut mixture
Place piece of prosciutto on piece of puff pastry
Wrap fig with puff pastry and prosciutto
Pinch pastry to seal
Place finished pastry pieces on parchment covered baking sheet
Bake 10-12 minutes until pastry is golden brown and cheese is melted
Serve on a bed of mixed greens and an oil and vinegar based salad dressing
