Things you need to know about Raclette!
Raclette cooking tips
Do not cut off the rind: you’ll get a crisp, flavoursome crust.
When preparing Raclette in pans, make sure you don’t overcook it as otherwise the fat separates.
Usual trimmings to go with a Raclette Dinner
• Gherkins
• Silverskin onions
• Mixed pickles
• Freshly milled pepper
• Paprika
• Red chilli flakes
• Sliced dried sausage
• Boiled potatoes
What to Drink with Raclette
Wine:
A light-bodied dry white wine or fruity light red wine. Try a dry Riesling, Sauvignon Blanc, Pinot Noir or Rosé.
Beer:
Any light flavoured beer will do too.
Nonalcoholic:
True connoisseurs recommend tea because it stimulates the digestion. But you can also try sparkling water with fresh squeezed lemon or iced green tea.
What to eat before and after a Raclette dinner:
I recommend not too much and nothing too heavy as the Raclette, in itself, is a big meal. However, you can serve seasonal salad as a starter and finish off with a fruit sorbet, fresh fruit or a fruit salad for dessert.
