Fresh Tomatoes with 5 yr Old Cheddar Cheese
~ The natural sharpness of the Cheddar pairs nicely with the sweetness of the tomatoes. Great as an appetizer, or as a side dish for breakfast, lunch or dinner!
Ingredients:
4 large tomatoes
150 grams grated 5-year old cheddar
1/4 cup prepared pesto
1/4 cup crushed garlic crisps (available at the shop)
1 tablespoon melted butter
Preparation and Cooking:
Heat oven to 450° F
Cut each tomato in half to sit flat on baking sheet
With sharp knife or melon scoop cut out a bit of the flesh and remove some of the seeds
Spoon pesto into tomatoes and top with grated cheddar dividing equally.
Combine garlic crisp crumbs and butter and sprinkle over tomatoes.
Bake 5 minutes or until bubbly.
Serve warm.
