Okanagan Lady Beet Starter
~I adapted this recipe from one I found while browsing online.
Serves 4

 
Ingredients:
1/4 teaspoon freshly ground black pepper
2 teaspoons “The Vinegar Lady” BAM Blackberry vinegar (available at the shop)
1 orange, peeled and sectioned
100g crumbled Okanagan Chèvre (available at the shop)
 
Preparation and Cooking:
Heat oven to 375ºF.
 
Peel the beets, cut into chunks, and toss with olive oil, salt, and pepper.
 
Cover in foil, and roast at until fork tender.
 
Remove from the oven and cool to room temperature.
 
Mix the beets with another drizzle of olive oil and the “Vinegar Lady” vinegar.
 
Combine the beets with the orange sections.
 
Top with the crumbled Okanagan Chèvre.
 
Serve and Enjoy!
