SKIMMING

Skimming refers to the removal of fat content from milk. Milk is referred to as skimmed, when part or all of the cream has been removed from the milk. Depending on the cheese more or less of the cream will be removed! Cheeses made from skimmed milk have less fat; some (but not all) remain quite flavourful. Talk to me about my low fat full of flavour selections! Generally skimmed milk cheeses have less than 20% fat and, semi-fat cheeses have 20% to 41% fat.
