Grilled Stuffed Chicken Breasts

Ingredients:
2 large whole, boneless chicken breasts or 4 ½ breasts
8 sun-dried tomatoes, soaked in hot water for 1 hour then drained
(For ease use ones in oil that are already soft!)
8 large basil leaves
120 grams creamy goat cheese
Coarse salt and black pepper
3 tbsp extra virgin olive oil
3 tbsp lemon juice
Preparation and cooking:
Cut goat cheese into 8 slices using your “Cheese Man” cheese slicer
(You are stuffing the breasts so if you just divide into 8 equal portions that will suffice)
Cut each whole breast in ½
Trim any sinews or fat off the breasts and discard
Rinse and dry
Cut side pockets into the chicken breasts
Stuff chicken breasts with the sun dried tomatoes, basil leaves and goat cheese slices
Pin the breast shut with toothpicks
Place breasts in a ceramic bowl and season with salt and pepper
Pour the oil and lemon juice over the breast and marinate, turning a couple of times while
heating the grill
Brush the grill with oil before grilling the breasts
Grill 4-6 minutes per side until done.
To test for doneness, poke the breast in the thickest part with your finger. When it feels firm to the touch it is done.
Transfer breast to your plates removing the toothpicks before serving
For a flashy presentation cut the breasts crosswise into thin slices using a sharp carving knife.
