Mold


A member of the fungus family. It can be on the surface of cheese (such as the fluffy white bloomy rind cheeses or can be developed internally as found in blue cheeses). Originally, the molds found in cheese were naturally occurring, such as the molds found in Roquefort. Today, much of the mold is manually introduced by the cheese maker to guarantee success and consistency.
