5 year Cauliflower Soup
Serves 6-8
Ingredients:
½ head cauliflower cut into 1½” florets (save the stems)
2 Tbsp butter (I use unsalted)
1 sweet onion finely diced
1 clove garlic, minced
2 Tbsp flour
¼ tsp grated nutmeg (I recommend fresh nutmeg)
A large pinch cayenne pepper
2 cups low salt chicken broth (homemade if you have it!)
½ cup whipping cream
2 cups water
3 sprigs fresh thyme
400g 5 year old cheddar
Freshly ground black pepper
Preparation:
Par boil the florets and stems until tender 3-4 minutes
Take a dozen or more of the florets and cut into mini florets
Over medium heat melt the butter and cook onions until soft
Add the garlic and cook an addition 2-3 minutes
Stirring constantly add the flour, cream, water, and broth
Add thyme and heat to a simmer
Stir in cheese and simmer for another 5 minutes
Remove thyme
Stir in the stem pieces and large florets
Purée the soup in batches
Reheat the mixture at a low temperature and add the remaining mini florets
Pepper to taste
Serve and enjoy
