3 Cheese, Nut & Dried Cranberry Pasta
~ Serves 4
Tis the season when Cranberries come to life, but if you are not a Cranberry lover substitute with your favourite dried fruit! You may want to try dried apricot!
Ingredients:
3 cups penne or any other uncooked pasta
1 tablespoon butter
1 shallot, chopped
2 tablespoons flour
⅓ cup dry white wine
1 cup chicken broth (or use some of the turkey broth that you will sure to be making after your turkey dinner!)
¼ cup milk
½ teaspoon dried thyme or Provence herbs
125g French Brie cut into small pieces
125g Danish Fontina
125g Swiss Gruyere grated (you can substitute Emmentaller for a milder taste)
2 tablespoons fresh parsley, chopped
⅓ cup toasted/roasted nuts, coarsely chopped
¼ cup dried cranberries or other dried fruit
Preparation and Cooking:
In a saucepan, melt butter over medium heat and sauté shallots 3-4 minutes.
Add flour and stir well.
Pour in the wine, broth and milk while stirring with a whisk.
Bring to a boil, add thyme and simmer 5 minutes.
Add parsley, Fontina and Gruyere cheese gradually. Let cheese melt completely.
Cook pasta approx 12-13 minutes.
Drain the pasta and return to saucepan. Stir the remaining Brie and the melted cheese mixture in with the pasta.
Serve topped with nuts and cranberries
