Cow or Goat Gouda Cantaloupe Salad – Serves 4-6
Ingredients:
- 6 Tbsp champagne vinegar
- 2 Tsp honey
- 1 Tsp Dijon mustard
- 125 ml olive oil
- 1 very ripe cantaloupe
- Sea salt
- ¼-½ tsp red pepper flakes (optional but awesome!)
- ½ cup toasted sunflower seeds
- 150 grams Goat Gouda, Double Cream Gouda or Prima Donna Gouda (a tough call)
- 2 Tbsp fresh basil leaves, cut into thin strips
- 2 Tbsp fresh mint leaves, cut into thin strips
Preparation and Cooking:
- In a small bowl, whisk together vinegar, honey, mustard and a pinch of salt.
- Slowly whisk in the olive oil.
- Cut a cantaloupe in ½ and scoop out the seeds.
- Cut each half in quarters,
- Remove the rind and cut into thin slices.
- Arrange sliced cantaloupe on a serving platter, overlapping slightly.
- Drizzle vinaigrette over melon slices.
- Sprinkle them with sea salt, red pepper flakes, sunflower seeds and herbs.
- Grate your choice of Gouda over the top using a microplane or fine grater.
Serve immediately.
