Stilton Grilled Potato, Bacon and Onion Salad
Ingredients:
- 4 slices of thick bacon
- 1 red onion, sliced 1/2 inch thick
- 2 tbsp extra-virgin olive oil
- Salt and pepper to taste
- 8-12 small new potatoes
- 2 tbsp mayonnaise
- 150 grams stilton blue cheese, crumbled
Preparation
and Cooking:
- Preheat the
oven to 400°.
- Spread the
bacon slices in a single layer on parchment paper on a baking sheet.
- Bake until
they are brown and crisp, about 15 minutes.
- Transfer the
bacon slices to a paper towel to cool and drain.
- Crumble into
1/2-inch pieces and set aside.
- In a saucepan,
grill the red onion slices on moderately high heat with 1 tsp of olive oil,
until lightly charred and tender, about 5 minutes.
- Cut the onion
slices into 1/2-inch pieces and set aside.
- Cut the potatoes
in half and boil at a simmer until they begin to get tender, about 5 minutes.
Drain.
- Grill the
potatoes with 1 tablespoon of olive oil over moderately high heat, turning
once, until they are tender and browned, about 5 minutes.
- In a large
bowl, mix the mayonnaise with the blue cheese, bacon, onions and potatoes. Toss
to coat.
- Transfer the
salad to a clean bowl.
