Stilton Grilled Potato, Bacon and Onion Salad

Ingredients:

  • 4 slices of thick bacon
  • 1 red onion, sliced 1/2 inch thick
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste
  • 8-12 small new potatoes
  • 2 tbsp mayonnaise
  • 150 grams stilton blue cheese, crumbled

Preparation and Cooking:

  • Preheat the oven to 400°.
  • Spread the bacon slices in a single layer on parchment paper on a baking sheet.
  • Bake until they are brown and crisp, about 15 minutes.
  • Transfer the bacon slices to a paper towel to cool and drain.
  • Crumble into 1/2-inch pieces and set aside.
  • In a saucepan, grill the red onion slices on moderately high heat with 1 tsp of olive oil, until lightly charred and tender, about 5 minutes.
  • Cut the onion slices into 1/2-inch pieces and set aside.
  • Cut the potatoes in half and boil at a simmer until they begin to get tender, about 5 minutes. Drain.
  • Grill the potatoes with 1 tablespoon of olive oil over moderately high heat, turning once, until they are tender and browned, about 5 minutes.
  • In a large bowl, mix the mayonnaise with the blue cheese, bacon, onions and potatoes. Toss to coat.
  • Transfer the salad to a clean bowl.
