Tomme de Savoie

Tomme is a name given to a family of cheeses produced in the French Alps and Switzerland. Generally, all Tomme cheeses are named after the village where they are produced. Tomme de Savoie is one such variety of Tomme cheese made in the Savoie region of northwestern France. This rustic beauty has the aroma of wet hay and lovely earthy flavour notes. The paste is firm but pleasantly pliable. During maturing the cheese starts developing a distinctive thick grey rind with patches of yellow or red moulding. This rind can be eaten, or not! So it is like having two cheeses in one! Pair with Merlot, crisp whites such as Chenin Blanc, and Farmhouse style Ales.

Etorki

This semi-firm sheep’s milk cheese is made in the French Basque region of the Pyrénées.  The pasteurised milk used to make this cheese is sourced from local black-faced or red-faced Manech ewes. Etorki has a rusty, bumpy rind because of the moulds used during pressing. The interior is white with occasional holes or slits. The texture is smooth, supple and velvety on the tongue, and the colour of the paste is golden-ivory. The aroma is earthy with mild and sweet, hazelnut and caramel flavours and a hint of hay.Pair Etorki with Chardonnay, Riojas, Cab Sauvignon, Syrah or traditional, sparkling white wines.

Louis d’Or

This Quebec cheese is inspired by the classic Alpine cheeses of the Jura region in France, and this cheese is a washed rind, organic, raw cow’s milk cheese with a smooth, consistently rich flavour and has a light, golden colour, and a soft, nuanced aroma.  Exhibiting exceptionally fine, complex fruity and nutty flavours. The 3-year-old version is exceptionally rare because the wheels of Louis d’Or normally sell long before they reach 36 months of age. Try pairing it with medium bodied and fruity wines.
