Stilton Grilled Potato, Bacon and Onion Salad

Cow or Goat Gouda Cantaloupe Salad  – Serves 4-6

 Ingredients:

  • 6 Tbsp champagne vinegar
  • 2 Tsp honey
  • 1 Tsp Dijon mustard
  • 125 ml olive oil
  • 1 very ripe cantaloupe
  • Sea salt
  • ¼-½  tsp red pepper flakes (optional but awesome!)
  • ½ cup toasted sunflower seeds
  • 150 grams Goat Gouda, Double Cream Gouda or Prima Donna Gouda (a tough call)
  • 2 Tbsp fresh basil leaves, cut into thin strips
  • 2 Tbsp fresh mint leaves, cut into thin strips

Preparation and Cooking:

  • In a small bowl, whisk together vinegar, honey, mustard and a pinch of salt.  
  • Slowly whisk in the olive oil. 
  • Cut a cantaloupe in ½ and scoop out the seeds.  
  • Cut each half in quarters, 
  • Remove the rind and cut into thin slices.  
  • Arrange sliced cantaloupe on a serving platter, overlapping slightly. 
  • Drizzle vinaigrette over melon slices.  
  • Sprinkle them with sea salt, red pepper flakes, sunflower seeds and herbs.  
  • Grate your choice of Gouda over the top using a microplane or fine grater.

 Serve immediately.
