Kaltbach Creamy and Cheddar Toastie
Kaltbach
Creamy and Cheddar toastie
Ingredients:
- 2 slices sourdough bread, about 2cm
thick
- 60 grams room temperature salted butter
- 80 grams grated 3 yr cheddar cheese
- 2 thinly sliced green onions
- 3-4 sprigs thyme or a couple of sage leaves
Preparation
and Cooking:
- Butter both slices of bread
- Arrange the cheddar on one of the slices, more thickly
around the edges to form a small crater in the middle.
- Scatter the green onions over the
bread, then put the Kaltbach Creamy in the crater.
- Cover with the other slice of bread,
butter side down, then spread the top of the sandwich with butter.
- Press the thyme or sage into the butter
coating.
- Heat a tablespoon of butter in a
heavy-based frying pan over a medium heat.
- Once foamy, put the sandwich herb side
down and put a heavy frying pan or casserole directly on top.
- Cook for about four minutes.
- Remove the weight, then peek at the
underside – you want it golden.
- When it’s ready, spread butter over the
unbuttered side of the sandwich and flip it over.
- Set the weight on top again and cook
for another three to four minutes, until golden.
- Transfer the sandwich to a plate, herb
side up.
