A semi-soft cheese is determined by its moisture content: Semi-soft cheeses contain more than 45% water. Examples of Semi-soft cheeses include Butter Cheese, Edam, Fontina, Gorgonzola, mild Gouda, Havarti, Limburger, Monterey Jack, and Roquefort. When preparing a cheese platter it is always nice to combine both flavor and textures of cheese.
